Cheese Scones **MBP**

After the last two indulgent posts, here's one inspired from a wonderful blog.



Cynthia's post on Inspired Baking, displaying amazing pictures of scones, quiches and the cheese straws made me drop her a mail asking for the recipes and she replied promptly with a clear and precise recipe. I made her cheese scones. The scones were delicious, served warm with a cup of tea.



What you need for the cheese scones : (as per Cynthia's recipe)

2 cups A P flour, plus extra for dusting
1 tsp baking powder
1 tsp baking soda
½ tsp salt
3 ounces cold unsalted butter
½ cup grated sharp cheddar cheese
2/3 cup whole milk, plus 2 tablespoons to brush on scones





Mix flour, baking powder, baking soda and salt together in large bowl. Cut in butter until it resembles coarse breadcrumbs. Stir in cheese. Make a well in the center of the mixture, add milk and bring the ingredients together. Do not knead, bring the ingredients gently together.



Turn the dough onto a floured surface and roll into a ¾ inch thick round. Cut
into circles and place on baking sheet, brush with milk and bake until they turn a light brown. Serve warm.

Do not work the dough. It needs very little kneading just like how you work a pie dough. Remember to use cold butter. Just bring the ingredients together and pat them flat and cut them. My scones were a lot flatter. The only advantage being I could slob it with more jam and clotted cream. They had soft sides and less crispy crusts.



I did not halve the scones. Instead topped some of them with honey.

Some of them were topped with strawberry preserves with a dollop of clotted cream.
